A NEW look bar and dining area are just part of the changes taking place at the historic Caledonian Hotel in Graham Street, Wonthaggi.

With more than a hundred years of history dating back to the heyday of local coal mining, The Caledonian has long been a favourite with the people of Wonthaggi.

Renowned chef Shane Dight is quietly working on a new menu that takes advantage of a wide range of high-quality produce sourced locally from the Bass Coast.

Owner Stephen Easton, licensee Nicole Williams and hospitality staff member Dakota Stanbridge are ready to make you feel more than welcome.

“We’re about to celebrate our 110th anniversary,” said Stephen.

The Caledonian building is recognised by the National Trust as one of Wonthaggi’s most valued historic buildings. Stephen Easton was so impressed that he bought the business.

“We’re working hard to make The Caledonian the Pearl of Wonthaggi again,” he said.

The hotel will be celebrating its relaunch on Thursday, November 13.

“The whole town’s welcome, we’re all ready to go,” said Stephen.

“Halloween night was just the start.”

The Caledonian is now looking forward to Christmas and New Year’s Eve bookings.

“First priority was the bar, then the dining section, now a new menu and music.”

The Caledonian is also offering traditional hotel-style accommodation upstairs.

Dating back to the early years of Wonthaggi, The Caledonian has remained one of the town’s major hotels, with links to the district’s early Scottish pioneers.

“It has a long history with the people of Wonthaggi.”

Back in 1915, the fare at The Caledonian was described as ‘the best the most skilled chef can produce with only the best brands of wines and spirits kept in stock’.

The Caledonian has remained a focal point of the town ever since, and Stephen Easton is now looking forward to welcoming back local clubs and community groups.
